Beast Meals for Camping with Kids

Sometimes meals are the hardest part of camping! Which is why I've compiled my top 3 of my tried and true camping breakfasts, lunches, and dinners!

Camping Breakfasts

1. Pancakes

Ingredients:

Option 1:

Instant pancake mix

Water


Option 2:

1 C flour

1 Tbsp. sugar

1 tsp. baking powder

1/2 tsp. baking soda

1 C milk

3 Tbsp. butter melted

1 egg

1/2 tsp. vanilla



There's two ways to do this one! Either use an instant mix and mix it up at camp with some water, or make these delicious pancakes ahead of time and keep cool until time to cook. I find it easiest to keep ingredients stored in an airtight blender bottle. This way you can pour straight onto the pan and minimize spills and dirty dishes.


Cook on hot pan for about 1 min or until golden brown on each side. Serve with syrup, jam, or butter.

2. Breakfast Burritos

Ingredients:

1/2 pound sausage

5 eggs

1/4 C milk

salt and pepper to taste

1/2 C cheese to top (optional)

4-6 tortillas


Heat a pan over medium heat and fry sausage until done. In a separate bowl, combine eggs, milk and salt and pepper. Add over the hot sausage in the pan and scramble. Once done add cheese on top. Serve with a flour or corn tortilla.


3. Parfaits

Ingredients:

Greek yogurt

Granola

Fresh berries (Strawberries, blueberries, and raspberries are my favorite.)


Add Greek yogurt into a bowl or cup and top with desired toppings.


Camping Lunches

4. Walking Tacos

Ingredients:

Doritos or Fritos (little bags or big bags)

1 can of black beans

1 can of corn

2 tomatoes

Green onions

Cheese

Lettuce

Sour cream

Guacamole


Crush a bag of chips and then open it, or crush some chips to put in a bowl. Add in beans, corn, tomatoes, onions, cheese, lettuce, sour cream, and guacamole on top. Eat right out of the bag and enjoy!


5. Ham and Cheese Sliders

Ingredients:

Hawaiian roles

Ham or Salami

Cheddar Cheese Slices

Mayo

Mustard

Salt and Pepper


Cut the whole pack of rolls in half and layer with mayo and mustard. Add on meat, cheese, and seasonings and put top on. Place rolls back in package and chop into little roll sandwiches when it's time to eat. Make to to keep refrigerated until then.


6. Peanut Butter Banana Tortillas

Ingredients:

4-6 tortillas

1/2 C Peanut Butter

2 Bananas

2 Tbsp.. Honey (optional)


Combine honey and peanut butter until smooth. Layer mixture onto tortillas and top with sliced bananas. Roll up and serve!


Camping Dinners

7. Lemon Chicken and Potatoes

Ingredients:

Chicken:

1/2 C Flour

4 Tbsp. lemon and herb seasoning

3 Tbsp. Montreal chicken seasoning

2 Tbsp. Sugar

3-4 chicken breasts sliced thin

1/2 C butter


Potatoes:

6-7 Yukon Gold potatoes

1 Yellow onions

2 tsp. garlic powder

1 tsp. onion powder

salt and pepper to taste

1/4 C butter


Chicken:

Combine flour, seasonings, and sugar in a large Ziploc bag. Slice chicken in 1/2 inch thick strips and coat in flour mixture. Melt butter in pan and add in coated chicken. Fry until cooked through and golden brown.


Potatoes:

Dice onion and sauté until clear in butter. While onions are cooking, slice potatoes into thin circles (the thinner you cut them the faster they will cook). Add into onions and cook covered until potatoes are soft. Add in seasonings and serve hot with chicken.


8. Brats

Ingredients:

6-8 brats

Hot Dog buns

Ketchup

Mustard

other toppings you want


If I have to tell you how to cook a brat, you might not want to go camping just yet....

9. Dutch Oven Lasagna

Ingredients:

12 Lasagna Noodles

1 Jar Pasta Suace

1 24oz container Cottage Cheese

2 C Mozzarella Cheese


Cook lasagna noodles in boiling salted water until tender. In a 12" dutch oven layer, coat the bottom of the oven in pasta sauce. Layer on a layer of noodles. Add 1/4 pasta sauce and 1/4 of the cottage cheese and combine on top of noodles. Add more noodles on top and repeat until you're out of ingredients. Top with cheese. Cook with light coals on top and medium coals under until sides are bubbling and cheese is browned on top (usually about 20 mins). Rotate lid and base every 5-7 mins.
